1995 Corton
Drinking at home.
1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - started drinking 10 minutes after decanting. The nose was very fragrant, with some leather, a bit meaty, plum, and a little animal notes. The acidity was definitely on the high side. After half an hour in the decanter, the nose got a little floral. The acidity got a little too high for my liking.

1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - decanted 45 minutes after opening, and served more than an hour after opening. This wine is definitely over the peak. Acidity is high as expected, and palate is thin. Some cooked fruit here.

1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - acidity was very high, and it got pretty grippy on the tongue. Nose was showing woodsy and leather notes. Not as pleasant as the other bottles I've had.

Burgs and Jura
Dinner at Yong Fu.
2017 Testut Chablis Grenouille - this was decanted to give it time to air, but the staff made the mistake of serving it right away. Nice and toasty nose. Good acidity, a little tannic and grippy on the palate.
2020 Tissot Arbois Les Bruyères - much bigger toasty notes on the nose. Palate was more focused with crisp, higher acidity.
2018 Rémi Jobard Meursault 1er Cru le Poruzot-Dessus - the nose was toasty as one would expect, and still got the acidity on the palate, but this was a little more buttery and certainly softer.
1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - first bottle was served after about 2 hours in decanter. First taste was a little acidic, but still got the black fruits. More fruity with the second pour, along with smoke and toasty notes. Second bottle decanted about 30 minutes before serving was tasting a little more fresh.

Hospices de Beaune

1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - started drinking 30 minutes after opening. Nice on the nose with ripe fruit, but the palate was kinda meh.
Bought from Christie's for HKD 774.
2010 Hospices de Beaune Beaune 1er Cru Cuvée Rousseau-Deslandes, mis en bouteille par Lucien Le Moine pour MNSC - big, toasty nose as usual, and this kept going for a long time. Also had nice and sweet fruit like blueberries. Lovely wine.

Bongwater night

2005 Inflorescence La Parcelle Côte de Béchalin, dégorgée en avril 2012 - the nose was really nice and toasty, very fragrant with nice notes of marmalade, toasty corn, and amazingly very nice and perfumed with floral notes.
2020 Nicolas Joly Clos de la Coulée de Serrant - still flinty on the nose but more ripe on the palate thanks to the grapes being harvested late.
Bought from Pillariwine for HKD 748.
2008 Jean-François Ganevat Cuvée Prestige - the nose was really oxidative, very savory on the nose, very much like the vin jaune from Jura.
Bought from Andromeda for HKD 680.
2020 Frédéric Cossard Skin-Contact "Rafling" - the color was orange and cloudy. Very ripe on the palate, more like a cider than wine with the tannins and the mouthfeel. Good depth on the palate and plenty of acidity.
2009 Hospices de Beaune Corton-Clos du Roi Cuvée Baronne du Bay, elevé et mis en bouteille par Lucien Le Moine pour El Bulli, en magnum - started drinking about 2 hours after decanting. Drinking really nicely now with some vanilla oak, so, sooo sweet that I could have taken it for a Californian pinot, with lots of coconut butter, too. Also blueberries. Tannins were still here on the palate. A lovely wine.

2013 Jean-Michel Stephan Côte-Rôtie Côteaux de Tupin, en magnum - started drinking about 2½ hours after decanting. Meaty and leather notes on the nose. The wine then really opened up some 3 hours after decanting, and became soooo floral with lots of violet. Beautiful!

Lucien Le Moine duo
Dinner at Neighborhood.
2012 Lucien Le Moine Corton Blanc - the palate seemed a little too ripe at first, which was not a surprise given the history of the wine. Definitely got that buttery profile on the nose. The acidity gradually came out as the wine got chilled further, and this ended up drinking just fine.

2010 Hospices de Beaune Beaune 1er Cru Cuvée Rousseau-Deslandes, mis en bouteille par Lucien Le Moine pour MNSC - meaty and a bit toasty on the nose, but nowhere near how powerful it was a couple of years ago. The wine has definitely softened a lot more, and is currently much more rounded and elegant.

95 Dominique Laurent
Drinking at home.
1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - started drinking a few minutes after decanting. Big nose of juicy black fruits like black plums and cassis, with more developed and secondary notes. Some 45 minutes later we have some leather on the nose, with acidity getting a little higher on the palate. An hour in the wine showed a little grilled meats, and another 15 minutes later there were plenty of woodsy notes and some spices. Acidity was getting pretty high on the palate now, and not so enjoyable together with some grippy tannins. The wine definitely peaked around 1 hour in and fell off a cliff at the 2-hour mark.

2009 Joh. Jos. Prüm Wehlener Sonnenuhr Riesling Kabinett - mildly sweet on the palate. Classic nose of flint and petrol.

1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - nose of leather and animal, still got a nice amount of fruit like black plums and stewed prunes. A little woodsy on the nose, too. The acidity was quite prominent on the palate, with a grippy finish thanks to some tannins.
Bought from Christie's for HKD 774.
2004 Pax Cuvée Keltie - drank about 20 minutes after decanting. The nose was really sweet and jammy with blackcurrants, but also really metallic. Showing woodsy notes like cedar, very fragrant.
Bought from the winery for USD 65 plus tax.

Dinner at La Maison.
1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - drank 30 minutes after double-decanting. Kinda astringent and grippy on the palate, but got better after tasting some butter and bread. Nice nose of cassis, with a little leather. There was still some sweetness on the palate amidst the acidity.

1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - drank 15 minutes after decanting. Definitely showing notes of leather, grilled meats, some woodsy notes. Acidity was a tiny bit higher. OK lah.

Bongwater with Gaggan
Dinner at Gaggan's home in Bangkok.
2017 Emilien Feneuil Les Ruisseaux, dégorgée le 10 Decembre 2020 - definitely tasted like a meunier on the palate. The nose was fragrant and kinda ripe, with a little sweet vanilla. Good acidity on the palate.
2008 Hospices de Beaune Corton-Clos du Roi Cuvée Baronne du Bay, elevé et mis en bouteille par Lucien Le Moine pour Juli Soler, ⟪Rte. El Bulli⟫, en magnum - very fragrant nose, plenty of sweet fruit, almost a little floral, and perhaps a little savory as well. After opening for more than an hour, the classic toasty notes came out on the nose. NOW it's a rich Burg.
2013 Henri Bonneau Cuvée Marie Beurrier, en magnum - decanted about 1½ hours after opening, this wine finally opened up after about another 1½ hours in the decanter. Fragrant nose with woodsy notes as one would expect. Softer on the palate now.
Bonnet-Ponson Griblanc - very metallic on the nose, like an Anjou pear. Acidity was pretty high on the palate.

1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - lean nose with leather and some stewed prunes. Acidity on the high side but still got the tannins.

Lynch-Bages and Cos Blanc
Dinner at the Chairman.
2016 Cos d'Estournel Blanc - oily on the nose with a little kerosene. Acidity was nice as always but not too sharp.
1995 Hospices de Beaune Corton Cuvée Charlotte Dumay, élevé par Dominique Laurent - a little stewed fruit, with black olives and leather notes. Good acidity here. More animal and not too much fruit, so this was a little more lean and less alluring.
1990 Lynch-Bages - decanted and served about an hour after opening. Not a lot of fruit left, but lots of graphite, smoke, grilled meats, and cedar. Soft on the palate by now.

3 magnums
Lunch at Sushi Saito in Tokyo.
Krug Grande Cuvée, fifth generation label, (159ème Édition), ID 411037, en magnum - really awesome, absolutely beautiful nose with lots of toast, brioche, and a little honey. After almost 1½ hours this was amazing, with notes that were almost like coffee. So, soooo happy I brought this.
Charles Heidsieck Private Reserve, ca. 1970, en magnum - a little savory with that salted plum nose I love so much. A little mineral. Drinking very nicely, too.
1996 Jean-Michel Gaunoux Corton Renardes, en magnum - nice on the nose with eucalyptus. Not lking the tannins being left on my tongue, though...

Infanticide night
Dinner at Caprice.
2017 Roses de Jeanne Blanc de Noirs Presle, dégorgement 2021 - nice and toasty notes, soooo floral. Nice and soft on the palate, soft and elegant, so alluring and almost ethereal.
Ulysse Collin Les Maillons Rosé de Saignée, bouteille n° 932, dégorgée en mars 2021 - very moussy at first, a bit too yeasty. Almost a little like cherry cough syrup. Unbelievably, I could swear that was coconut butter in the nose. Much more punchy and powerful.
2017 Raveneau Chablis 1er Cru Butteaux - served 3 hours after opening. A little rounded on the palate than expected, with some acetone, a little lemon, and flint on the nose. Initially served too cold so not revealing much, but the acetone remained even after warming up. Least favorite wine of the night.
2019 Bernard Bonin Meursault Les Tillets - served 3½ hours after opening, and again too cold at first so only showing some flint. 4½ hours after opening this was much more open, with big, toasty nose, but sweeter on the nose.
2017 Bernard Bonin Meursault 1er Cru Les Genevrières - served 3½ hours after opening. Bigger toast on the nose, a bit on the lean side, with good acidity but not too sharp. Once it opened up further it was really nice, with a huge nose of toast around 5 hours after opening, along with flint.
2019 Moron-Garcia Corton Cuvée Baie Par Baie, bouteille n° 225/898 - back in bottle after 2½ hours in the decanter, and served after another 1½ hours in bottle. Fragrance of roses, black cherries, really sweet on the nose and really nice 30 minutes after serving. Palate finally went downhill 6½ hours after initial opening.
2019 Pedres Blanques - served 1½ hours after opening. Lots of very ripe fruit, with leather and dried herbs. Very minty some 2½ hours after opening. Apparently this needs 12 hours of aeration...
